Sunday Soup

It occurred to me today that I really enjoy making soup.

This weekends experiment comes from the current issue of Vegetarian Times (thanks erin!)

Roasted Red Pepper and Carrot Soup.  I’m not a big fan of Carrot soup, but I love roasted red pepper so we’ll see.  My only adjustment to the recipe was a trade out of Sweet Basil for Bay leaf. Luckily I didn’t have any bay leaf.  I don’t really like Bay.  I think sweet Basil will be okay as a sub.

  1. for dinner, I picked two bay leaves off my plant.  fresh basil is gone, but I’ve got seeds, dirt, pots, and water (so maybe I’ll get some started tomorrow – not a ‘plan’ mind you cuz that never works, just a thought)  how about tarragon or margarom?  I’ve been playing with those alot lately. (maybe i’ll learn to spell them someday)Recipe please!!!

  4. That sounds soooo good!  My son-in-law has made several kinds of soup throughout this long, cold winter, and everyone of them has been good.

  5. This does look delicious.  TravelerBlue talked about it last night before we ate dinner together.  Thanks for the well-wishes.  Small children and unicorns will make me feel better .  I’m brewing a cup of tea as well and I’m already feeling much better than I did four hours ago.  Peace!
