It occurred to me today that I really enjoy making soup.
This weekends experiment comes from the current issue of Vegetarian Times (thanks erin!)
Roasted Red Pepper and Carrot Soup. I’m not a big fan of Carrot soup, but I love roasted red pepper so we’ll see. My only adjustment to the recipe was a trade out of Sweet Basil for Bay leaf. Luckily I didn’t have any bay leaf. I don’t really like Bay. I think sweet Basil will be okay as a sub.
