It IS Friday!


I have had two dreams in the last week that referenced my lip balm.  How weird is that?

My husband has hurt his back, also has had to take his car into the shop this  morning.  I have a sore throat and a stuffy nose.  At least we’re on track for our normal vacation. 🙂

I am very excited.  I’ve printed out all of the itineraries and boarding documents.  I’ve collected all of my capris and shorts that I will be taking.  Today I will stop and get a prescription filled and pick up a few odds and ends that one needs when away from home.  Tomorrow after work I will go work out, then home to finish the workout then I will start packing!  Saturday will be all of the last minute things.  Making sure we have enough dog food and any things we may have forgotten.

Then Sunday we’re off!

I took my daughter to Yoga last night.  She did not like it, but it’s like guacamole; you can’t let the look of it put you off, you have to try it!  I’m happy she did.

I’ve been typing this on an off since about 8:30 am.  Everytime I’m sitting on hold I open it up. 

I’m really feeling like I’m getting a cold so I will add pick up Zycam and Airborne this afternoon.  I don’t know if it works, and don’t care.  Whatever I have to do to not get sick!  I’m listening on a large conference call and the call leader in Stockholm has a cold.

Well, it’s hours and hours later now.

Now I’m on lunch.  I think I’m going to take off and run to the drug store and take care of all of that stuff.

Todays Soup

With a few minor changes, including the addition of red curry paste.


    * 1 onion, diced
    * 2 red bell peppers, diced
    * 3 cloves garlic, minced
    * 1 carrot, sliced
    * 1 can chickpeas (optional)
    * 4 tbsp olive oil
    * 1/2 tsp cumin
    * 1/2 tsp coriander
    * 1/4 tsp cayenne
    * 2 1/2 cups diced tomatoes
    * 1 cup coconut milk
    * 1 cup peanut butter
    * 1/2 cup vegetable broth
    * juice from 3 limes –
    * 1 tsp salt
    * 1/2 cup fresh chopped basil or cilantro –

Saute the onion, peppers and garlic in olive oil in a large pot until onions are soft, about 3-5 minutes.

Add the remaining ingredients, except for the basil and bring to a simmer. Allow to cook over low heat for one hour.

Transfer half of the soup to a blender and puree until smooth, then return to the pot. Add basil or cilantro and enjoy your coconut soup!

It’s cooking now.  It was fun to put together because there are so many ingredients that you just toss into a pot! 

This will be my last soup experiment for a few weeks.
