Have you seen this?

I don’t know what made me grab it when I saw it last weekend, but I did.  And then I made it.    As I was eating it I was thinking “hmmm, this is interesting”.  I followed the directions which meant I had a very liquidy vegetarian bean soup.  So this weekend the experimenting begins!  I really like the spice blend of this pack.  So I bought a bag of colorful mixed beans and did the quick soak.  I also chopped an onion and browned it up in some olive oil.  Now I’ve got the bean mix from the packet and my beans in a pot of water simmering with my browned onions.  After a couple of hours I’ll add in the spice mix and let simmer for a while longer.  I think it will be very good!  Hearty & warm on a cold fall day.

Of course next weekend I’ll experiment with adding whatever pops into my head when I’m eating this batch.  The soup packet was on sale for $00.99 x 2, and the extra bag of beans for $1.99.   I used half the bag of beans per batch.  Makes about 8 cups of soup.  Perfect!  No need to freeze.
